Best Ever Gluten Free Banana Walnut Honey Bread 🍯 🐝 MELISSA HORNUNG
This one recipe does me proud! I have been experimenting with many different nut flours and other gluten free options. I’ve substituted these flours as well as swapped refined sugar with natural sweeteners like honey for in some of the more conventional recipes and the results are astounding. You will enjoy all of the flavors of the traditionally baked breads without all of the health issues linked to wheat, glutens and other refined flours and sugars. Guilt free treats! I call them Sweet Nothings.
So go ahead and indulge, guilt free and share the joy!
What you’ll need:
3-4 ripened bananas
2 cups of gluten free flour
1 teaspoon baking soda
1 teaspoon baking powder
2 eggs
1 cup of raw local honey
1 stick of butter softened
1 tablespoon of cinnamon
1 1/2 cup chopped walnuts
Preheat a 325 oven. Pre-grease a bread pan with butter. In a large mixing bowl cream together first the bananas, honey, butter and eggs. Then add flour, baking soda and powder, cinnamon and mix well. And lastly, add only 1 cup of the chopped walnuts to the batter and mix in, reserving the rest for as a topper. Pour all of the batter into the pre-greased bread pan and top with the remaining nuts. Bake for 45 minutes and check. Bread should feel spongy, it will rise high. If you can insert a clean dry knife into the center and it comes out clean the bread it ready. If not continue baking 5 more minutes or until a knife can be inserted and come out clean.
The presentation of this bread has a professionally baked appearance. Great for gifts and house warmings. Serve warm, sliced with European butter and home made jam.
