Bacon and Black Bean Soup! MELISSA HORNUNG

Got Bacon?  Then you’ve got the base for a delicious soup! Starting with a sauté of onion and garlic, add chopped bacon and veggies, and you have the beginnings of something wonderful. With Keto diets front and center, fat has become the new fashion! Bacon has a daily dose of the fat required to get your body into Ketosis faster and makes for a delicious soup that eats like a meal. 

1/2 pound of chopped bacon 🥓 

1 onion chopped 

4 cloves of garlic 

I carrot chopped fine

2 celery stalks chopped fine

1/4 tomato sauce

3 cups of chicken broth 

1 can of black beans 

Salt and pepper to taste 

1/4 coconut oil

Start by adding the coconut oil to the bottom of a soup pan on a medium high heat. Add the onions and garlic and sauté for a few minutes. Then add your chopped bacon. Sauté that all together for another 10 minutes until the bacon is cooked, not crispy. Then add your chopped vegetables. Stir that together and sauté a few minutes more 5-10 minutes while stirring. Add the chicken broth and salt and pepper to taste. Cook together at a medium heat for about 15 minutes. Then serve! Simple and delicious.
