Eggs Anytime! Huevos Conquistador!  MELISSA HORNUNG

I would hate to limit eggs 🍳 to just breakfast. For more reasons than one, eggs are the perfect food and on the farm 🐓 our eggs are free!  Eggs also make a great topper for many things at any meal. In an attempt to use up some of the vegetables in the fridge, we like to eat them while they are fresh, I chopped them all up and sautéed them and then added some brown rice and black beans. Then, I topped that off with some fried eggs...beautiful eggs,

wonderful eggs, marvelous eggs, glorious eggs!!!!! 🎶 🎼 🎵 and avacado slices and called it Huevos Conquistador! Which means the egg conqueror in Spanish 😬

Eggs are a no carb, glutten free food, loaded with omega 3 fatty acids and protein. The kind of protein found in eggs helps sustain your mental clarity and energy throughout the day! In addition along with iron, vitamins, minerals, and carotenoids. The egg has a palethera of disease-fighting nutrients like iron, vitamins and minerals.

Brown rice is a highly nutritious food, also gluten free while providing the body with a wide array of vitamins, minerals and antioxidants. And because brown rice is a whole grain it contains a healthy amount of fiber. We all know why fiber is good for 😜 however,  did you know that fiber makes you feel full for longer periods of time than foods without it? Tests have revealed that those who incorporate more whole grain foods to their diet like brown rice in fact lose weight.  

Black beans are a legume, a plant protein loaded with minerals like iron, phosphorus, calcium, magnesium, manganese, copper, and zinc in black beans all contribute to building and maintaining bone structure and strength 💪🏻 and yes, with plenty more fiber to add to the mix 😜 oh yeah, it’s also gluten free! 

What more can we say about vegetable other than eat as many as you can with every meal. 🥕 🍆 🌱 🍅 🌶 Vegetable are linked to every life source energy that we need to stay alive and healthy, and to be strong 💪🏻  In fact,  a diet that is mostly plant based is associate with a lower risk of everything! Like, cancer, diabetes, heart disease, macular and degenerative diseases and the list goes on. Nuff said. 

What you’ll need:

Eggs

Any vegetables you want to chopped up:

Onions

Carrots

Broccoli

Garlic

Red green or yellow pepper 

Brown rice

Avacado slices

1 can of black beans 

Olive oil

Chipotle or red chill sauce 

Salt pepper 

Prepare brown rice as directed ahead of time. Chop all vegetables, cover the bottom of a deep frying pan with olive oil, heat to medium high and sauté vegetables until just soft. Add a tiny bit of water, about 1/4 cup to the pan to encourage a both and stir while still sizzling. Add the brown rice and black beans, salt and pepper and combine in the pan. Spoon vegetables and rice mixture in shallow soup bowls, fry 2 eggs per serving and place on top. Serve with Avacado slices and chipotle or chili sauce for added zing! 🌶 

I made whole grain seeded toast for added fiber and served with red wine and green juice. See recipe for green juice in the blog. If you are on a gluten free diet, eliminate the toast.
