Seeded Whole Grain Avocado Toast with Tomato Slices MELISSA HORNUNG

You wouldn’t think that something this simple could be so good. But it is! And, oh so good for you too. Full of healthy fats and healthy whole grain fiber goodness, it’s a great way to start your day or to enjoy as a healthy snack. I had this as a quick, light satisfying dinner last night. It filled me up but wasn’t too heavy and with just enough carbs it ensures a good night sleep. 

The trick as always, is in the ingredients you choose. Stick with organics, select the reddest tomato you can find and go for a seeded whole grain bread that is freshly made with no preservatives of stabalizers. Health food stores like Whole Foods usually have the best varieties and often times, made in house.  But, main stream groceries are getting on board too with healthier options.

What you’ll need!

Whole grain bread slices

Ripened avocado 🥑 

Irish or Amish butter, at least organic 

A red ripened, slightly firm, tomato 🍅 

Salt and pepper

Broil two slices of bread, then butter it and broil it again to slightly bake the butter in. This makes a crispy, flavorful brioche. Cut the avocado in half and scoop out one side of the avocado with a spoon and smash it onto one side of the bread slices, being careful not to break the toast apart,  and then do the same thing with the other. Add your tomato slices on top, a little salt and pepper to taste and voila! A healthy and delicious meal!
