New Year Resolution Salad! MELISSA HORNUNG
If getting healthy in the new year is your goal, add this to your meal planning repertoire! This salad packs a plethora of super foods that include a cornucopia of nutritious antioxidants and life saving greens! Add this light and mild home made dressing to make it an irresistible blend of flavors that will fill you up with everything that you need for the day and nothing you don’t!
Add a side of roasted chicken or toss in some grilled shrimp for a hardier dish or keep it a vegetarian meal.
What you’ll need:
Everything organic
1 medium package of mixed baby kale, spinach and swiss chard greens.
1 head hearts of romain chopped
A hand full of garbonzo beans
1 chopped cucumber, skin and all
1 diced medium tomato, the reddest you can find
4 small chopped spring onions, scallions
1 small package of raspberries
A hand full of fried cranberries
A hand full of sun flower seeds or chopped nuts if you prefer, walnuts, peacans, almonds toasted, yum 😋
A sprinkle of Parmesan cheese optional
Dressing
1/2 cup Olive Oil
1 teaspoon of Dijon mustard
1 teaspoon of mayonaise (can do a vegan kind)
Season to taste with garlic powder, steak seasoning (it combines a good blend of herbs and spices)
Salt and pepper if needed
In a large salad bowl combine all of the prepreped ingredients. Whisk together the dressing, pour over the entire salad and toss well. Serve on individual salad plates. Enjoy!
