Sometimes Dinner is For One MELISSA HORNUNG

With our busy life styles and a traveling spouse, sometimes that requires dinner pour une. And when it does, these pan roasted dishes are the way to dine sans date. It’s simple, quick, easy and healthy. All that is required are simple, fresh ingredients and a deep skillet with a lid,  some olive oil and voila! A gourmet meal for one in 15 minutes. 

Full recipe:

Two chicken thighs, skinless, boneless or skin on bone in, however you prefer it. 

A mix of fresh herbs, I choose rosemary, sage and garlic chopped and mixed together 

McCormicks seasoning Montreal Steak is the best!

Hymilan salt and ground pepper 

1/4 cup olive oil to coat the bottom of the pan well. 

A bunch of asparagus 

1/2 cup chicken stock or white wine or both......you can always just drink the wine while you cook Julia Child’s style, some for the pan some for the cook!  💃🏼 🍾 

You won’t believe how Something this simple is this good. The key is in the timing and technic and this meal is prepared in literally 20 minutes depending on the size of the meat. 

So, to get started, prepare your skilled with olive oil and pre heat on a medium to high heat, at the same time, season the chicken on both sides with the McCormicks Seasoning, salt and pepper, then place the chicken in the pan and cover. Then, chop the herbs and garlic open the lid and sprinkle that on top. Brown chicken on both side 2 minutes, covering each time it’s turned and then top with your liquid, swish around in he pan to loosen the browning on the bottom with your wooden spoon or spatula making a lovely golden brown sauce and then, cover the skillet and cook for 10 or 15 minutes more turning once or twice in between. 

At the same time, prepare the asperigus by cleaning and chopping off the tough ends. After the 10-15 minutes are up, add the asperigus to the pan and cover again for 3-5 more minutes while swishing around in the pan from time to time. You may need to add a dash more of white wine or chicken stock. Use your judgment, I trust you. 

When finished, simply lift the chicken and asparagus from the pan with tongs and assemble on a decorative plate, top with the juices, lite a candle, grab some wine, red or white and head to a pretty location, breath and enjoy!
