Eggs Any Time! MELISSA HORNUNG

Eggs are not just for breakfast, especially here on the farm. Our girls produce 5 eggs a day so that means we incorporate eggs to many of our meals, even for a noon time snack. Eggs that come from free range happy chickens that are on an organic diet are loaded with extra sources of vitamins like D, B as well as extra protein.  Also unlike super market eggs, Farm raised, free range chickens on an organic diet, that actually see the sun have 1⁄3 less cholesterol, 1⁄4 less saturated fat, 2⁄3 more vitamin A, 2 times more omega-3 fatty acids, 3 times more vitamin E and here’s the clincher, and 7 times more beta caroten! Fact! 

Not only are natural Farm raised eggs good for you, they taste great in so many ways. Like this little snack I whipped up using just 3 fresh morning eggs from the girls, 1 juicy red ripened farmers market tomato diced and some basil from my already thriving herb garden, a dash of garlic powder, pepper, some ground pink Himalayan salt, a sprinkle of Parmesan cheese and voila! Afternoon snacking eggs! Oh don’t forget to garnish with some extra basil leaves! Beautiful, delicious and taking all of just 5 minutes! 

Eating healthy is so easy, it’s just a matter of simplifying everything by having the right ingredients on hand. Grow your own herbs it’s easy, fun and so convenient to have fresh herbs on hand at all times. Cheaper too and less waist. Throw them into your fresh dishes, make a pesto ahead of time or incorporate them into dressings and sauces. And, if you don’t have a farm or your own chickens, no worries, your local or area farmers market will have everything that you need!  Happy eating 🐣
