Something on the Sweeter Side! Gluten Free Peacans Puffs MELISSA HORNUNG

Ok so you crave something sweet after super but you are resticated to gluten free or you feel like something really light? Have no fear, these little chrispy clouds of goodness will fill the bill. And, with only 4 ingredients, you can whip them up with ease and keep them in a zip lock baggy for those random craves. Perfect for afternoon tea! 

What you’ll needy:

2 egg whites

3/4 cups of brown sugar

1 1/2 cups of toasted Peacan halves

1 tablespoon of real vanilla extract 

If chocolate is what you crave you can add mini chocolate morsels or in place of the Peacans. 

So, you can start by toasting the Peacans in a 350 oven for 5 minutes and then set aside. Reduce oven to 250

In a mixer, whip your egg whites until they form peeks (stiff enough to stand on their own) 

Add your brown sugar and blend. Then add the Peacans. (And mini chocolate chips if you wish) 

Drop mixture with a teaspoon onto a greased cookie sheet and bake in a 250 oven for one hour. They come out as little weightless pillows of heaven!
