Easy Crispy Gluten Free Veggie Pizza

This is an amazing, quick and easy, on the go, healthy mid day snack, appetizer or dinner for two. This little gem starts with an organic gluten free frozen pizza available at most major super markets. I choose Amy's brand Glutten Free Pizza with a rice flour crust, always a pleaser and another great way to get in all of your daily garden veggies. You can slice up just about any vegetables but I chose green and red pepper, onions, zucchini, red, yellow heirloom and cherry tomatoes.  However, you can pile on whatever veggies you can think of, mushrooms, broccoli, spinach, even carrots. I add some fresh garlic, grated pameasian or Romano cheese, drizzle with olive olive, especially around the edges for a crispier crust and bake at the suggested temperature, usually around 425, until the edges are a dark brown. This trick has been my go to for many last minute gatherings and it is always devoured. Cut it up into hors d'ouves size squares and serve it fresh from the oven. Delicioso!
