Don't Under Estimate The Power of Celery!

We are used to seeing celery in the super market with a lighter green hue and much thicker stalks then the one shown here. But this is what celery looks like when it has been organically grown and farm raise by hand and in its purest form. It's deep green leaves are loaded with healing properties and celery as a whole is one of the healthiest foods you can eat and has been used for centuries for its medicinal value?

Celery, which has the scientific name Apium graveolens, is a vegetable in the plant family called Apiaceae. The benefits of celery begin with it being an excellent source of antioxidants and contains beneficial enzymes, in addition to vitamins and minerals such as vitamin K, vitamin C, potassium, folate and vitamin B6.

I'll bet you thought that celery was just an empty vegetable good for its crispy texture when added to salads or plunged into dips, but did you know that celery juice may protect your body from cancer? This vegetable is high in cancer-fighting compounds, including phthalides, polyacetylenes and coumarins. The Park Ridge Cardiology website notes that these nutrients may prevent tumor cells from growing, detoxify cancer-causing particles in your body and lower your risk of cellular mutations. The physicians at this practice recommend drinking 10 oz. of celery juice twice per day for its anti-cancer benefits.

I juice with celery every day adding apple cucumber, fresh ginger root and half a lemon to start the day off on the right foot. You get energy, increases vitality and health benefits that over time, makes your skin glow as well as adds to your over all health.

But don't stop with just this magical green drink, celery is loaded with fiber and there is added benefit in incorporating it into you daily meal plan any way you see fit. Chop them up in an egg, bean and tuna salad, add them to your stir fries and mixed vegetable saitees. Use the leaves and chopped stalks in soups and they taste amazing in stuffing too. For children, smear it with a healthy almond butter or their favorite spread. Make sure it's organic and fresh too. It begins to loose its potency after about a week in the refrigerator.
