Grilled Sockeye Salmon

The best way to cook fish is outdoors for the obvious reasons of lingering aromas in the kitchen the day after. But there is nothing quite like a lovely piece of fish like Sockeye Salmon on the grill. Not only in the warmer months, but in the winter too. Sockeye Salmon is a line caught wild Alaskan fish and it's naturally organic. Don't fall for those farm raised kinds, they are raised under less than fresh conditions and don't have even half the nutritional value of the wild caught kinds. Sockeye Salmon is known for its dark red orange color and rich taste and it's loaded with healthy Omega oils, vitamin packed with A, C, D and E, it's an excellent source of protein and very low in saturated fats and calories. More impressively is the rare fact that It's free from any pharmaceuticals, growth hormones, colors or any other needless, unnatural and otherwise harmful additives! Alaskan waters are still about the cleanest on the planet too. Now if you that doesn't grab you, maybe this will, when consumed on a regular basis ( 2-3 times a week) along with a healthy balance diet, it has been shown to significantly decrease your risk of heart disease, lowers cholesterol levels and triglycerides. So, that all said, besides it's great flavor, its about the best thing that you can eat! Try it as a fish taco too!

What you'll need:

Sockeye Salmon (proportioned per serving)

Grill Mates Seasoning by McCormick's (I like Montreal Steak)

Salt and pepper to taste

Garlic, a few fresh cloves, minced

Olive oil


I can of Cannellini Beans, white kidney beans

Cherry tomatoes sliced in half

A pad of butter


Broccoli Rabe (proportioned per serving)

Prepare your fish with seasoning, some of the garlic, and drizzle with olive oil. Or make a marinade with all of those ingredients mention, your choice. Prepare the broccoli rabe al dente (still a bit crisp not soggy) and set aside and cover. Sauté some minced garlic in olive oil and butter pad. Then add your beans and cherry tomatoes for about 3 minutes on a medium heat and set aside and cover. Grill you fish directly on the grill or on foil your choice. Grill for about 15 minutes with the lid closed for a medium fish. Make sure you watch it, temperature of fish can very depending on thickness. A little more a little less depending on your preference. I recommend medium. Once everything is prepared, plate it by laying broccoli rabe on the bottom, piece of fish on top of it and then spoon the bean and tomato mixture over all and slightly to the side. Serve immediately with a wedge of lemon and parsley garnish. Enjoy with a fruity Pinot Grigio, Dry Reinstalling or Rosé. (or all of the above!)
