Goodness On The Go
In a world where people are becoming more health conscious, yet still on the go, there are short cuts you can take that are healthy and delicious. With major groceries stores carrying more organic foods and some prepared, access to a healthy dinner is only one quick stop away. I give you, the organic rotisserie chicken! Slow cooked and seasoned, this little gem cost the same in most cases as buying it raw. And oooooh its so good! I say its one of the best deals going. Slice this beauty up and serve it with tossed greens or sautéed veggies and you have yourself a real meal in only minutes!
This idea works very well for a dinner party in a pinch. Just figure 1 rotisserie chicken per 4 people and throw together a cheese plate and some yummy sides and your styling. Getting the main course out of the way, saves time and energy that you can use to focus on your guests.
Salad Suggestion:
CHOPPED GREENS AND TOMATO
servings 2-4
Choose your favorite organic crispy greens, romain, curly lettuce, bibb
Arugala
1 Vine ripened organic tomato
1 small One organic cucumber diced with skin on
5 Spring onions chopped or 1/4 C sweet onion diced
DRESSING:
1/4 Olive Oil
Tsp of dijon mustard
Tsp of mayonaisse
one clove of garlic minced fine or pressed in a garlic press
Combine and mix with a wire whip or shake in an enclosed container
Add to the salad and toss with grated Romano and or Parmesan cheese
Serve on the side of sliced chicken
Easy Vegetable Sauté
ZUCCHINI TOMATO AND ONION
servings 2-4
1 Zucchini sliced thin
1 medium to large tomato
1 Sweet Onion
1 Clove garlic mined
2 Tsp olive oil
Salt and Pepper to tast
Saute on a medium heat for 3-5 minutes or until tender. Add a pad of butter and seasoning. Serve with sliced chicken.
